WEIRD DAIRY-FREE, EGG-FREE BANANA BREAD

3 cups of flour
3 teaspoons baking powder
(or recommended: 2 teaspoons baking powder, 1 of baking soda)
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/'2 teaspoon salt

3 super ripe bananas
1/3 cup oil (preferably canola)
1/2 cup sugar
1/4 cup maple syrup
1 tablespoon lemon juice
1 teaspoon vanilla extract

walnuts/pecans if you have them


Heat oven to 350/180. Mix together dry ingredients in a smaller bowl. Mash bananas in a bigger bowl, then add oil, then sugars, lemon juice and vanilla extract. Add nuts. Now add the mixed dry ingredients, folding in with a spatula. Pour in greased and floured bread tin. Cook for an hour.
